A couple weeks ago, Brandon and I attended an ASL session of the temple. They provide extra screens which have every word of the session projected on them, along with several actors signing the session as well. Though some might find it distracting, I found it very edifying. If ya'll get a chance, you should attend an ASL session.

I think I've done that at the Provo temple before. I feel like anything out of the ordinary makes for a great session experience, because it forces you to tune in and think a little more than you might otherwise.
Yes, that has also been my experience. At Portland, I've only seen captioning (without the ASL insert). Reading along as I hear the words really helped my concentration. It also seems to enhance learning because I am experiencing it in a different way.
